A serious look at serious things (srzly!)

Your body craves food.  No, not electrolytes.  Let’s talk about food, man. 

With ALS, you know that I’m losing the ability to swallow.  This has led to a much-reduced diet and tasty supplement of vanilla flavored goo injected into my stomach.  And yes, if you burp, you taste it.  It’s not delicious.

I have a refined palate, however.  With my pinky in the air I eat foi gras, and chortle about Grey Poupon.  So I eat things I am able to chew and swallow, like hot dogs.  I know, so refined, right?

What happens though when you crave something else, that vanilla goo and hot dogs don’t give you?  For example, I want Doritos so bad, but I can’t eat them because they are too crunchy and if I swallow wrong they get stuck.  Well, Mel to the rescue again!  And she had to spoon feed me!

Gumbo, Reader-land, gumbo.  The cajun trinity download (1)and the pope added in.  That means onion, celery, and bell peppers with garlic added in.  And okra, of course.

You see, Reader-land, I was born in Louisiana.  I don’t know how, or why, in all my travels, I always will consider cajun the best comfort food, but there it is.  Ever since Mrs. Neighbors brought garlic bread over I have been craving it and craving it, and Mel made me Gumbo yesterday and that craving was answered.  If you don’t enjoy garlic, I sincerely apologize to you, because it is so good!  Gumbo is something that meets all the craving.  All of them! download (2)

So I started thinking about other food I could eat that wouldn’t give me acid reflux.  Steak?  Grilled cheese?  Pizza?  Etc.  But, then I thought about… Garlic grilled cheese!  This, without crusts, and only lightly grilled, sounds like the greatest thing ever and if anyone has a good recipe, let me know!

Don’t mind me, I’m just drooling.
